I can remember the sizzle of the wok pan as the savory sauce was poured into it, the feel of the heat of the stove, the first taste of the hot food before it was ready to be sold to the hungry crowd, and the smiles of satisfied customers. Those were my fondest memories of my childhood -- surrounded by the delicious dishes my mother used to make under a pop-up tent in various county fairs and festivals. It instilled in me a passion in catering and has never ceased to motivate me to recreate the same amazing Thai and Laotian food that I was brought up with. Family recipes passed down to me and brought to you in our food trailer has been a dream come true and I thank you for helping to keep that dream alive.
